Light & Fluffy Cornbread

Ingredients
  

  • ½ salted butter melted
  • 1 cup plain yogurt
  • 1 can cream of corn 398mL
  • 4 large eggs
  • 2 cups cornmeal
  • 2 cups all purpose flour
  • 1/3 cup sugar
  • 3 teaspoon baking powder
  • 1 ¼ teaspoon table salt

Method
 

  1. Preheat oven to 400F.
  2. In large bowl, whisk wet ingredients.
  3. In a separate medium sized bowl, whisk dry ingredients.
  4. Add dry ingredients to wet ingredients and fold until just barely mixed.
  5. Pour batter into 9x13 pan.
  6. Bake for 25-30 minutes or until toothpick pulls dry. Set aside to cool.
